SCAMORZA CROQUETTES

INGREDIENTS (4 servings):

EGGPLANT AND SMOKED SCAMORZA CROQUETTES:
– 1 eggplant
– 2 eggs
– smoked scamorza
– a clove of garlic
– oil
– pepper
– parsley
– breadcrumbs
ZUCCHINI AND WHITE SCAMORZA CROQUETTES:
– 3 zucchini
– 2 eggs
– white scamorza
– a clove of garlic
– oil
– pepper
– parsley
– breadcrumbs

With this croquettes you can enjoy the perfect balance of eggplant and smoked scamorza and between zucchini and white scamorza.

These are simple and tasty snacks that you can eat directly with your hands at a buffet or at a dinner with your friends!

PREPARATION:

 

First cut into cubes the eggplants, keep them on a flat surface with salt and wait that water inside them comes out. Rinse and dry them.

For the zucchini just cut them into cubes and move to the next step.

Put the vegetable you have choose in the mixer with garlic and oil.

Pour the mixture into a bowl and add two beaten eggs, parsley, pepper and bread crumbs until dough is too solid to create the croquettes.

Once formed a scoop of mixture, press inside it the cubes of scamorza and cover them well.

Fry them in hot oil until the edges begin to brown.
