Gran Moravia originates in Moravia, an agricultural region of the Czech Republic chosen by Brazzale for its particularly favourable conditions for dairy farming and cheese production.
Here, the Group has developed the Gran Moravia Environmentally Sustainable Supply Chain: an ISO 22005-certified agricultural supply chain system with verified environmental parameters, based on traceability, technical coordination across farms, attention to animal welfare, and raw material quality control.
The supply chain brings together a network of selected farms, coordinated by Brazzale’s technical staff, with extensive areas available for growing forage to feed dairy cows. This abundance of land allows for low livestock stocking densities and nitrate loads per hectare below the EU limits established to protect groundwater.

Gran Moravia Environmentally Sustainable Supply Chain: an ISO 22005-certified agricultural supply chain system with verified environmental parameters.
The territory
Moravia offers favourable climatic and agronomic conditions: cooler summers, abundant natural water resources, fertile soils, and a long tradition of agriculture and livestock farming.
The region’s natural rainfall helps limit the need for artificial irrigation, reducing freshwater and energy use. The climatic conditions also contribute to forage quality, directly benefiting the quality of the milk used in cheese production.
Animal Welfare and Milk Quality
Within the Gran Moravia Environmentally Sustainable Supply Chain, dairy cows are housed in modern facilities with loose housing and individual cubicles. Their diet is largely based on forage grown directly by farms within the supply chain, selected and monitored with the support of Brazzale’s technical staff.
Breed selection, forage quality, climate, and herd management all contribute to producing milk that is particularly well suited to cheesemaking and the production of long-aged cheeses.
Traceability and Supply Chain Control
The Gran Moravia Environmentally Sustainable Supply Chain follows an integrated model that enables every stage to be monitored and traced: from milk production and cheesemaking at the Litovel dairy through to maturation and packaging.
The supply chain system enables ongoing checks on raw materials, processes, and the finished product. ISO 22005 certification and verified environmental parameters attest to the traceability and control model of the Gran Moravia Environmentally Sustainable Supply Chain.
From Milk to Gran Moravia
At the Litovel dairy, milk from the supply chain is transformed into Gran Moravia, a long-aged cheese that brings together Italian cheesemaking tradition, the Moravian region, and modern production technology.
The cheesemaking process draws on the expertise of Brazzale’s cheesemakers and careful control of production processes to create a cheese that is naturally lactose-free thanks to its long maturation, suitable for vegetarians through the use of non-animal rennet, and characterised by a sweet, clean, and distinctive flavour profile.
